  • 2 ripe peaches, sliced
  • 8 oz halloumi cheese, sliced
  • 3 corn cobs, shucked
  • ½ small red onion, thinly sliced
  • 3 Tbsp cilantro, chopped
  • 3 Tbsp fresh lime juice
  • 3 tsp honey
  • Cracked black pepper, to taste

Instructions

  1. Whisk together lime juice, honey, and black pepper in a small bowl for the dressing.
  2. Boil corn cobs in a large pot for 1-2 minutes; chill once cooked.
  3. Cook halloumi slices in a heated pan until golden brown on both sides; cool.
  4. Cut corn kernels off the cobs and halloumi slices into halves.
  5. In a large bowl, combine corn kernels, halved halloumi, peaches, red onion, and cilantro; pour dressing over and toss gently.
