- 8 oz halloumi cheese, sliced
- 3 corn cobs, shucked
- ½ small red onion, thinly sliced
- 3 Tbsp cilantro, chopped
- 3 Tbsp fresh lime juice
- 3 tsp honey
- Cracked black pepper, to taste
Instructions
- Whisk together lime juice, honey, and black pepper in a small bowl for the dressing.
- Boil corn cobs in a large pot for 1-2 minutes; chill once cooked.
- Cook halloumi slices in a heated pan until golden brown on both sides; cool.
- Cut corn kernels off the cobs and halloumi slices into halves.
- In a large bowl, combine corn kernels, halved halloumi, peaches, red onion, and cilantro; pour dressing over and toss gently.
