- 1 avocado, halved and sliced
- 1 cup cherry tomatoes, halved
- 1 cup cooked or canned corn, drained
- 1 cup fresh parsley or arugula

Instructions
- In a small nonstick pan, heat a touch of olive oil over medium heat. Crack in the egg and cook sunny-side-up until the white is set and the yolk remains runny.
- In a bowl, arrange halved avocado, avocado slices, cherry tomatoes, corn, and fresh parsley or arugula.
- Place the fried egg in the center of the bowl. Drizzle olive oil over the halved avocado and sprinkle sesame seeds over the sliced avocado.
