  • 3/4 cup light coconut milk (divided)
  • 1/2 cup sweet chili sauce
  • Juice of 1 lime
  • Salt and pepper
  • 8 cups cauliflower rice (fresh or frozen)
  • 11/2 tablespoons coconut oil
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. Marinate the Chicken: In a large Ziplock bag, mix 1/2 cup coconut milk, sweet chili sauce, juice from half the lime, salt, and pepper. Add chicken breasts, seal the bag, and marinate in the refrigerator for 30 minutes to 1 hour.
  2. Grill the Chicken: Preheat grill to medium-high heat. Grill each chicken breast for 4-5 minutes per side until cooked through (internal temperature of 165°F). Let rest for 5 minutes.
  3. Prepare Cauliflower Rice: Heat coconut oil in a large skillet over medium-high heat. Add cauliflower rice; season with salt and pepper. Sauté for about 5-7 minutes until tender, then stir in remaining lime juice and coconut milk along with chopped cilantro.
  4. Serve: Plate cauliflower rice topped with grilled chicken. Enjoy with extra sweet chili sauce on the side.
