  • 2 pounds sweet potatoes, peeled and sliced
  • 1 cup fresh cranberries
  • 1 cup heavy cream
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup shredded Gruyère cheese or plant-based alternative
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil sliced sweet potatoes in a large pot of water until tender, about 10-15 minutes. Drain well.
  3. Layer half of the sweet potatoes in a greased baking dish, followed by half of the cranberries.
  4. In a mixing bowl, combine heavy cream, brown sugar, cinnamon, salt, and pepper.
  5. Pour half of the cream mixture over the layered ingredients in the baking dish.
  6. Repeat layering with remaining sweet potatoes and cranberries; pour on remaining cream mixture.
  7. Top with shredded Gruyère cheese and breadcrumbs.
  8. Bake for 30-35 minutes until golden brown and bubbly.
