Ingredients
- 2 large sweet potatoes (about 1.5 lbs), peeled and thinly sliced
- 4 cups kale, stems removed and chopped
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup Gruyère cheese, grated
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
- 1 tablespoon olive oil (for greasing)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and thinly slice the sweet potatoes; set aside.
- Wash and chop the kale into bite-sized pieces. Sauté in a skillet with a splash of water or olive oil for about 5-7 minutes until wilted.
- Grease a baking dish with olive oil. Layer sweet potato slices at the bottom, followed by sautéed kale, heavy cream mixture seasoned with garlic and nutmeg, and grated Gruyère cheese. Repeat layers until all ingredients are used.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20-25 minutes until golden brown on top.
