Ingredients
- Half small butternut squash, diced
- 3 medium parsnips, diced
- 1 medium sweet potato, diced
- 2 medium carrots, diced
- Half fennel bulb, sliced
- 1 medium onion, diced
- 4 cups vegetable stock
- 1 cup milk (dairy or unsweetened almond)
- Olive oil, salt, and thyme for seasoning
Instructions
- Preheat oven to 425°F (220°C). Dice all vegetables and spread on a large baking sheet.
- Drizzle half olive oil and sprinkle half salt over the veggies. Toss to coat and roast for 25-30 minutes until golden brown.
- In a large pot over medium heat, add remaining olive oil and sauté the onion with a pinch of salt until translucent (5-7 minutes).
