Description

Tomato, Peach, and Burrata Salad is a vibrant summer dish that beautifully marries the sweetness of ripe peaches, the juiciness of fresh cherry tomatoes, and the creaminess of burrata cheese.   • 23 ripe peaches, sliced
  • 1 ½2 cups cherry tomatoes, halved
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese
  • ½ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 1 tablespoon honey
  • ½ shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • ¼ cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • Red pepper flakes
  • Kosher salt and black pepper
  • ¼ cup toasted pumpkin seeds
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a glass jar, combine all vinaigrette ingredients (olive oil, vinegar, honey, shallot, garlic, lemon zest, herbs) and shake well.
  2. In a large mixing bowl, toss together tomatoes, peach slices, and cherries. Add one-third of the vinaigrette and mix gently.
  3. Let the salad marinate for at least 15 minutes at room temperature.
  4. Before serving, break apart the burrata over the salad and drizzle with remaining vinaigrette. Top with toasted pumpkin seeds and additional herbs.
