Ingredients
- 1/2 cup dry quinoa
- 3/4 cup water
- 2–3 cups chopped tomatoes
- 15 oz can chickpeas
- 1/4 cup chopped green onion
- 1/4 cup fresh lime juice
- 2 tablespoons avocado oil
- 1 clove garlic
- 1/2 tsp ground cumin
- 1/4 tsp sea salt
- 1/8 tsp pepper
- fresh parsley for garnish
Instructions
- Rinse quinoa under cold water using a mesh strainer.
- Toast quinoa in a small pot over medium heat for a few minutes.
- Add water and bring to a boil; reduce heat and simmer covered for 12-13 minutes until fluffy.
- Prepare remaining ingredients: chop tomatoes, green onions, and parsley.
- In a bowl, mix dressing ingredients: avocado oil, lime juice, minced garlic, spices.
- Once quinoa has cooled, combine it with prepared ingredients and toss with half the dressing.
- Adjust seasoning if necessary and serve chilled or at room temperature.
