- 20 ounces three cheese refrigerated tortellini
- 1 cup corn (fresh cooked, canned or frozen)
- 15 ounces black beans (drained and rinsed)
- 1 red bell pepper (chopped)
- 1 avocado (peeled, seeded and chopped)
- 1½ cups cherry tomatoes (halved)
- ¼ cup red onion (chopped)
- ¼ cup fresh cilantro (chopped)
- 3 Tablespoons olive oil
- Juice from 2 limes
- 2 Tablespoons rice vinegar
- 1 clove garlic (minced)
- 1 teaspoon granulated sugar
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper (to taste)
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Cook the tortellini according to package instructions. Drain and rinse under cold water.
- In a large mixing bowl, combine the tortellini with corn, black beans, bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
- In a resealable jar, mix olive oil, lime juice, rice vinegar, minced garlic, sugar, chili powder, cumin, salt, and pepper. Shake until well combined.
- Pour the dressing over the salad ingredients and toss gently to coat. Adjust seasoning if needed before serving.
