Ingredients

  • 20 ounces three cheese refrigerated tortellini
  • 1 cup corn (fresh cooked, canned or frozen)
  • 15 ounces black beans (drained and rinsed)
  • 1 red bell pepper (chopped)
  • 1 avocado (peeled, seeded and chopped)
  • 1½ cups cherry tomatoes (halved)
  • ¼ cup red onion (chopped)
  • ¼ cup fresh cilantro (chopped)
  • 3 Tablespoons olive oil
  • Juice from 2 limes
  • 2 Tablespoons rice vinegar
  • 1 clove garlic (minced)
  • 1 teaspoon granulated sugar
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and freshly ground black pepper (to taste)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Cook the tortellini according to package instructions. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the tortellini with corn, black beans, bell pepper, avocado, cherry tomatoes, red onion, and cilantro.
  3. In a resealable jar, mix olive oil, lime juice, rice vinegar, minced garlic, sugar, chili powder, cumin, salt, and pepper. Shake until well combined.
  4. Pour the dressing over the salad ingredients and toss gently to coat. Adjust seasoning if needed before serving.
