Ingredients

  • 3 1/3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup lukewarm water
  • 3 tablespoons olive oil (plus more for brushing)
  • 4 cups baby spinach leaves (roughly chopped)
  • 2 tablespoons olive oil (for filling)
  • 1 medium yellow onion (finely chopped)
  • Salt and black pepper to taste
  • 1/2 teaspoon Aleppo pepper (optional)
  • 1 cup crumbled feta cheese

Instructions

  1. In a mixing bowl, sift flour and create a well in the center. Add salt, lukewarm water, and olive oil. Mix until a shaggy dough forms.
  2. Knead on a floured surface for about 2-3 minutes until smooth. Rest in an oiled bowl covered with a damp towel for 20 minutes.
  3. For the filling, combine spinach, onion, olive oil, salt, pepper, Aleppo pepper, and feta in another bowl.
  4. Divide rested dough into six balls and roll each thinly into circles.
  5. Place half a cup of filling on one side of the circle; fold over to seal.
  6. Cook in a preheated non-stick pan over medium-high heat for about 2 minutes on each side until golden brown.
