- 3 1/3 cups all-purpose flour
- 1 teaspoon salt
- 1 cup lukewarm water
- 3 tablespoons olive oil (plus more for brushing)
- 4 cups baby spinach leaves (roughly chopped)
- 2 tablespoons olive oil (for filling)
- 1 medium yellow onion (finely chopped)
- Salt and black pepper to taste
- 1/2 teaspoon Aleppo pepper (optional)
- 1 cup crumbled feta cheese
Instructions
- In a mixing bowl, sift flour and create a well in the center. Add salt, lukewarm water, and olive oil. Mix until a shaggy dough forms.
- Knead on a floured surface for about 2-3 minutes until smooth. Rest in an oiled bowl covered with a damp towel for 20 minutes.
- For the filling, combine spinach, onion, olive oil, salt, pepper, Aleppo pepper, and feta in another bowl.
- Divide rested dough into six balls and roll each thinly into circles.
- Place half a cup of filling on one side of the circle; fold over to seal.
- Cook in a preheated non-stick pan over medium-high heat for about 2 minutes on each side until golden brown.
