- 270 ml coconut milk
- 150 g powdered sugar
- 8 g cornstarch
- 90 g unsweetened shredded coconut
- 90 g almonds (toasted and chopped)
- 170 g white chocolate
- 60 ml whipping cream
- 226 g butter
- 210 g powdered sugar
- 2 tsp vanilla extract
- ¼ tsp salt
- 186 g coconut (shredded or desiccated)
Instructions
- Preheat your oven to 350°F (175°C). Combine milk and white vinegar; let sit for 5 minutes.
- In a separate bowl, whisk together sugar, oil, vanilla extract, flours, baking powder, baking soda, and salt.
- Mix wet ingredients with dry until just combined; divide batter into two greased 9-inch round pans.
- Bake for 30–35 minutes or until a toothpick comes out clean. Allow cooling in pans for 10 minutes before transferring to a cooling rack.
- For the coconut filling, mix coconut milk, powdered sugar, cornstarch, shredded coconut, and vanilla extract.
- To make the buttercream, melt white chocolate with cream; combine with creamed butter and sifted powdered sugar until fluffy.
- Assemble by layering the cake with coconut filling and frosting with buttercream.
