  • 1 1/2 cups uncooked sushi rice
  • 2 cups water
  • 2 teaspoons toasted black sesame seeds
  • 2 teaspoons sesame oil
  • 1/4 cup soy sauce
  • 2 tablespoons fruit vinegar
  • 1 teaspoon sugar
  • Nori sheets (for serving)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with water in a rice cooker or stovetop pot according to instructions.
  2. Once cooked, mix in sesame seeds and sesame oil. Allow to cool until manageable.
  3. Wet hands and shape about 1/2 cup of rice into triangular balls.
  4. Combine soy sauce, fruit vinegar, and sugar in a bowl until dissolved.
  5. Heat oil in a skillet over medium heat and grill onigiri until golden brown on all sides (about 2-3 minutes each).
  6. Brush with the soy mixture for caramelization, then serve wrapped in nori or with dipping sauces.
