  • 8 oz rice noodles
  • 1 cup fresh cilantro, chopped
  • 3 tbsp lime juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 2 tbsp olive oil (extra virgin)
  • 1 cup assorted vegetables (bell peppers, carrots), chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup

Instructions

  1. Cook the rice noodles according to package instructions, drain, and set aside.
  2. Chop the vegetables into bite-sized pieces.
  3. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute). Add the chopped vegetables and cook until just tender.
  4. In a small bowl, whisk together soy sauce, lime juice, honey or maple syrup, and chopped cilantro.
