  • 1 can chickpeas (15 oz), rinsed and drained
  • 2 cups cabbage, diced or shredded
  • 3 Persian cucumbers, sliced
  • 1 cup fresh basil
  • 1 cup spinach
  • 1 large avocado
  • Juice and zest of 1 lemon
  • 3 tbsp nutritional yeast
  • 3 cloves garlic, crushed
  • 2 tbsp white apple vinegar
  • 2 tbsp water
  • Kosher salt

Instructions

  1. Cook pasta according to package instructions in salted boiling water until al dente. Drain and cool quickly by adding ice cubes and a drizzle of olive oil.
  2. In a blender, combine basil, spinach, avocado, garlic, nutritional yeast, vinegar, lemon juice, and salt; blend until smooth.
  3. In the cooled pasta pot, mix in chickpeas, cabbage, cucumbers, and green onions. Pour in dressing and toss until well combined.
