  • 2 cups raspberry preserves
  • 1/4 cup fruit juice (or broth)
  • 1/2 cup flour
  • 1/4 cup sugar
  • 7 ounces almond paste
  • 4 tablespoons unsalted butter
  • 2/3 cup sliced almonds
  • 1 cup powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, combine flour, powdered sugar, and chilled butter in a food processor; pulse until crumbly. Press the mixture into a greased glass pan and bake for 20 minutes.
  3. Mix raspberry preserves with fruit juice in a bowl and spread over the baked crust.
  4. For the topping, combine flour, sugar, almond paste, and butter in the food processor; pulse until crumbly. Sprinkle it over the raspberry filling and add sliced almonds on top.
  5. Bake for another 40 minutes until golden brown on top. Allow cooling completely before icing with a mixture of powdered sugar, milk, and vanilla.
