- 1 lb. fettuccine
- ¼ –⅓ cup extra virgin olive oil
- 1 small onion, quartered and sliced
- 1 lb. fresh asparagus, cut into 1 ½ inch pieces
- 3 cloves garlic, minced
- ¼ –½ teaspoon red pepper flakes (to taste)
- ⅓ cup grated fresh Parmesan cheese
- 8–10 fresh basil leaves
- 1 tablespoon fresh thyme leaves
- 1 – 1½ tablespoons lemon zest
- Salt and pepper (to taste)
Instructions
- 1. Bring a large pot of water to boil and cook the fettuccine al dente according to package instructions. Reserve ½ cup of pasta water before draining.
- 2. In a large skillet, heat olive oil over medium heat. Sauté sliced onion until browned at the edges (about 5 minutes). Add asparagus and cook until crisp-tender (2–3 minutes). Lower the heat and stir in minced garlic for an additional minute.
- 3. In a large bowl, combine drained pasta with sautéed vegetables. Drizzle in remaining olive oil along with red pepper flakes, Parmesan cheese, basil leaves, thyme leaves, and lemon zest. Mix well and season with salt and pepper to taste.
