  • 1 teaspoon baking soda

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 3/4 cup sour cream
  • 1 teaspoon lemon zest
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13 inch baking dish with cooking spray.
  2. In a bowl, mix together brown sugar and flour, cutting in butter until crumbly for the topping.
  3. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream together room temperature butter and granulated sugar in a large bowl until light and fluffy.
  5. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract, lemon juice, sour cream, and lemon zest.
  6. Gradually add dry ingredients to wet ingredients until just combined; fold in blueberries gently.
  7. Layer half of the batter in the baking dish, sprinkle half of the topping on it, followed by the remaining batter and topping.
  8. Bake for about 40 minutes or until a toothpick inserted comes out clean.
