  • 1 large egg yolk
  • 1 tablespoon heavy cream
  • 1 ¼ cups all-purpose flour
  • ⅓ cup confectioners’ sugar
  • ¼ cup lemon juice (from about 2 lemons)
  • ¼ cup honey
  • 10 ounces blueberries
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, confectioners’ sugar, and salt. Mix in chilled butter until crumbly. Add egg yolk, cream, and vanilla; blend until dough forms. Press into a tart pan and chill for 30 minutes.
  2. Bake crust lined with parchment and weights for 20 minutes; remove weights and bake for an additional 10 minutes until golden brown. Allow to cool completely.
  3. For the lemon curd filling, combine lemon juice, zest, honey, egg yolks, and whole egg in a saucepan over medium heat. Stir constantly until thickened (about 10 minutes); stir in butter until melted. Pour into cooled crust; refrigerate for at least two hours.
  4. For the blueberry layer, cook blueberries with honey and cornstarch in another saucepan until thickened (5-7 minutes). Cool slightly before pouring over lemon curd.
  5. Chill assembled tart again for at least one hour before slicing.
