- ⅓ cup confectioners’ sugar
- ¼ cup lemon juice (from about 2 lemons)
- ¼ cup honey
- 10 ounces blueberries
- 2 tablespoons cornstarch
Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, confectioners’ sugar, and salt. Mix in chilled butter until crumbly. Add egg yolk, cream, and vanilla; blend until dough forms. Press into a tart pan and chill for 30 minutes.
- Bake crust lined with parchment and weights for 20 minutes; remove weights and bake for an additional 10 minutes until golden brown. Allow to cool completely.
- For the lemon curd filling, combine lemon juice, zest, honey, egg yolks, and whole egg in a saucepan over medium heat. Stir constantly until thickened (about 10 minutes); stir in butter until melted. Pour into cooled crust; refrigerate for at least two hours.
- For the blueberry layer, cook blueberries with honey and cornstarch in another saucepan until thickened (5-7 minutes). Cool slightly before pouring over lemon curd.
- Chill assembled tart again for at least one hour before slicing.
