  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 8 ounces cream cheese
  • 3 cups blueberries
  • 2 large eggs
  • Zest and juice of one lemon

Instructions

  1. Preheat your oven to 350ºF (177ºC) and line an 8" x 8” baking pan with foil.
  2. For the crust, mix melted butter, flour, sugar, and lemon zest until combined. Press into the bottom of the pan.
  3. For the filling, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in yogurt, lemon juice, and zest.
  4. Gently fold in blueberries and pour over the crust.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center.
  6. Allow to cool completely before slicing into squares.
