Ingredients
- 1 cup unsalted butter
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 8 ounces cream cheese
- 3 cups blueberries
- 2 large eggs
- Zest and juice of one lemon
Instructions
- Preheat your oven to 350ºF (177ºC) and line an 8" x 8” baking pan with foil.
- For the crust, mix melted butter, flour, sugar, and lemon zest until combined. Press into the bottom of the pan.
- For the filling, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in yogurt, lemon juice, and zest.
- Gently fold in blueberries and pour over the crust.
- Bake for 30-35 minutes until set but slightly jiggly in the center.
- Allow to cool completely before slicing into squares.
