- 2 large potatoes
- 2 teaspoons canola oil
- 1 teaspoon kosher salt
- 2 tablespoons butter
- ¼ cup heavy cream
- 4 slices turkey bacon (cooked and crumbled)
- ½ cup shredded cheddar cheese
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon black pepper
- ½ teaspoon kosher salt
- 4 large eggs
- Salt and pepper (to taste)
- Minced chives (for garnish)
Instructions
- Preheat your oven to 350°F.
- Prick each potato several times with a fork, coat with canola oil, and sprinkle with kosher salt. Bake for about 1 hour until fork-tender.
- Once baked, slice potatoes in half lengthwise and scoop out the insides into a bowl, leaving a ¼-inch wall.
