  • ½ cup buffalo sauce

  • 1 medium spaghetti squash

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Place the halves cut-side down in a baking dish with water and roast for about 45 minutes until tender.
  4. In a mixing bowl, combine shredded chicken, buffalo sauce, celery, green onions, and red bell pepper. Stir in ranch dressing if desired.
  5. Flip the cooked squash halves over and fill them with the buffalo chicken mixture. Return to the oven for an additional 10-15 minutes until heated through.
