  • 1 1/2 pounds butternut squash (peeled and cubed)
  • 2 gala apples (peeled and diced)
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons brown sugar (or honey)
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup raisins
  • 1/4 cup pecans
  • 1/4 cup dried cranberries

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine cubed butternut squash, diced apples, cinnamon, vanilla extract, and brown sugar. Mix until well coated.
  3. Add salt and black pepper; stir to combine.
  4. Pour the mixture into a baking dish and spread evenly.
  5. Dot the top with chopped butter and cover with a lid or foil.
  6. Bake for 15 minutes.
  7. Remove from oven, stir in raisins and nuts gently, cover again, and return to the oven.
  8. Bake for an additional 15 minutes or until squash is tender.
