  • 2 cups water
  • 1 tablespoon pure vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1 cup plus 2 tablespoons cake flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup unsalted butter (softened)
  • 1/2 cup buttermilk
  • 2 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by buttering and flouring them.
  2. In a saucepan, heat the chile powder with 1 cup of water until simmering, then stir in the vanilla and set aside.
  3. In a mixing bowl, combine both flours, sugar, baking soda, salt, and cocoa powder. Mix on low speed.
  4. Add softened butter to dry ingredients and beat until grainy.
  5. Gradually add remaining water and buttermilk; incorporate eggs one at a time.
  6. Slowly mix in the hot chile mixture until just combined.
  7. Pour batter into prepared pans and bake for 35-40 minutes or until a toothpick comes out clean.
