Ingredients
- 2 lbs Angus ground beef (85/15)
- 1 1/2 Tbsp ground coffee
- 1/2 Tbsp salt
- 1/2 Tbsp paprika
- 1/2 Tbsp brown sugar
- 1/2 Tbsp pepper
- 1/2 Tbsp onion powder
- 1/2 Tbsp garlic powder
- 1/4 Tbsp ground coriander
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 2 Tbsp heavy cream (or extra BBQ sauce)
- Brioche or pretzel buns
- Green leaf or arugula lettuce
- 8 slices cooked turkey bacon
- 2 Tbsp butter
- 1/2 yellow onion (diced)
- 3 cloves garlic (roughly minced)
- 1/2 cup ketchup
- 1 1/2 Tbsp tomato paste
- 1/4 cup apple cider vinegar
- 2 1/2 Tbsp Worcestershire sauce
- 1/4 cup brown sugar (packed)
- 1 tsp ancho chile powder
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 Tbsp brewed coffee
Instructions
- In a mixing bowl, combine all coffee rub ingredients: ground coffee, salt, paprika, brown sugar, pepper, onion powder, garlic powder, and ground coriander.
- In another bowl, season Angus ground beef with half of the coffee rub, kosher salt, and black pepper. Mix gently.
- Shape mixture into six equal patties (¾ inch thick) with a small indentation in the center.
- Heat a grilling pan or outdoor grill over medium-high heat. Cook patties for 5-7 minutes on each side until desired doneness is reached.
- While cooking, prepare toppings by sautéing diced onions and minced garlic until translucent. Add ketchup, tomato paste, apple cider vinegar, Worcestershire sauce, brown sugar, ancho chile powder, salt, pepper, and brewed coffee; simmer for 10 minutes until thickened.
- Toast buns on the grill. Assemble burgers by placing patties on buns and topping with sautéed onion sauce and other desired toppings.
