- 1 pound chicken thighs
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons lime juice
- 1/2 cup peanut butter
- 2 cups shredded cabbage (green & red)
- 1 cup grated carrots
- 4 flour tortillas (or lettuce leaves)
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 1/2 teaspoon chili flakes
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- 1/4 cup cilantro
Instructions
- In a mixing bowl, combine soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes. Add chicken thighs and marinate for at least 15 minutes.
- Heat a skillet over medium heat and cook the marinated chicken for about 7-8 minutes per side until browned and cooked through. Let cool before slicing into strips.
- For the sauce, mix peanut butter, honey, rice vinegar, and minced garlic in a small bowl until smooth.
- In another bowl, combine shredded cabbage, grated carrots, and cilantro. Drizzle with some peanut sauce and toss to coat.
- Assemble your wraps by placing sliced chicken on each tortilla followed by crunchy slaw. Drizzle with additional sauce if desired.
