  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons lime juice
  • 1/2 cup peanut butter
  • 2 cups shredded cabbage (green & red)
  • 1 cup grated carrots
  • 4 flour tortillas (or lettuce leaves)
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/2 teaspoon chili flakes
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 clove garlic, minced
  • 1/4 cup cilantro

Instructions

  1. In a mixing bowl, combine soy sauce, sesame oil, lime juice, garlic powder, ground ginger, and chili flakes. Add chicken thighs and marinate for at least 15 minutes.
  2. Heat a skillet over medium heat and cook the marinated chicken for about 7-8 minutes per side until browned and cooked through. Let cool before slicing into strips.
  3. For the sauce, mix peanut butter, honey, rice vinegar, and minced garlic in a small bowl until smooth.
  4. In another bowl, combine shredded cabbage, grated carrots, and cilantro. Drizzle with some peanut sauce and toss to coat.
  5. Assemble your wraps by placing sliced chicken on each tortilla followed by crunchy slaw. Drizzle with additional sauce if desired.
  6. Roll up tightly and secure with toothpicks if needed.
