- 1.5 lbs boneless, skinless chicken thighs
- 3 tbsp maple syrup
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 medium sweet potatoes (about 500g / 1.1 lbs)
- Salt and freshly cracked black pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Chop sweet potatoes into cubes and toss with olive oil, smoked paprika, salt, and pepper; spread on one side of the baking sheet.
- In a bowl, whisk together maple syrup, Dijon mustard, garlic, olive oil, thyme, salt, and pepper.
- Pat chicken thighs dry and place on the other side of the baking sheet; brush half of the marinade over them.
- Roast for 15 minutes, flip chicken, brush with remaining marinade, and toss sweet potatoes; roast for an additional 10-15 minutes until cooked through.
- Serve in bowls topped with toasted pecans or pumpkin seeds and extra maple syrup if desired.
