- 1 (8 oz) can crushed pineapple (do not drain)
- 1 1/2 cups sweetened shredded coconut (divided)
Instructions
- Preheat your oven to 350°F. Grease and flour a 9-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt until well combined. Set aside.
- In a large bowl, beat together the butter, cream cheese, and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and coconut extracts.
- Gradually add the dry ingredients to the wet mixture while mixing until just combined. Fold in the crushed pineapple and 1 cup shredded coconut gently.
- Pour batter into the prepared loaf pan and sprinkle with remaining coconut. Tent loosely with foil to prevent burning.
- Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean.
