- 5 medium red Romano peppers
- 2 cups crumbled feta cheese
- 6 tablespoons Greek yogurt
- ¼ cup fresh dill (chopped)
- 2 cloves garlic (grated)
- ½ tablespoon olive oil
- 3 tablespoons olive oil (for dressing)
- 1 clove garlic (grated, for dressing)
- 1 tablespoon lemon juice
- ¼ teaspoon salt
Instructions
- Preheat your oven to 220°C (420°F) and line a baking pan with parchment paper.
- Prepare the peppers by making a slit in each one and brushing them lightly with olive oil. Bake for 5 minutes until slightly softened.
- Let the peppers cool for about 10 minutes before removing the seeds.
- In a mixing bowl, combine olive oil, crumbled feta cheese, Greek yogurt, chopped dill, and grated garlic. Season with salt if needed.
- Generously stuff each pepper with the feta mixture.
- Return the stuffed peppers to the oven and bake for another 10 minutes until heated through.
