  • 1 large egg
  • 2 to 3 tablespoons coconut oil (liquid state)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups blueberries

Instructions

  1. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together almond milk, egg, coconut oil, and vanilla extract until smooth.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined; do not overmix.
  4. Fold in the blueberries carefully.
  5. Preheat a non-stick skillet over medium-high heat and lightly coat it with cooking spray.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 3 minutes), then flip and cook for another 2–3 minutes until golden brown.
  7. Keep cooked pancakes warm in an oven set to low while finishing up the rest.
