  • 1 large chicken breast roast (about 800 g)
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Juice of lemon
  • Salt & pepper
  • 600 g baby potatoes
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Rub chicken breast with olive oil, garlic, parsley, thyme, rosemary, paprika, lemon juice, salt, and pepper.
  3. Toss baby potatoes in a mixing bowl with olive oil, salt, and pepper.
  4. In a baking dish, place the seasoned chicken in the center and scatter the potatoes around it.
  5. Roast for about 40–45 minutes until the chicken is cooked through and golden brown.
  6. For the pan sauce, pour chicken broth into the baking dish after removing it from the oven to scrape up any browned bits; stir in butter if desired.
  7. Slice the chicken and serve with pan sauce drizzled over both the chicken and potatoes.
