  • 23 pounds sirloin (cut into 1 1/2 – 2" chunks)
  • 1 head garlic (about 46 tablespoons minced)
  • 1/2 cup vegetable oil
  • 1 tablespoon brown sugar
  • 1 tablespoon dry parsley
  • 1 tablespoon Worcestershire sauce (or vinegar as an alternative)
  • Kosher salt to taste
  • Black pepper to taste
  • For Garlic Butter: 6 tablespoons unsalted butter and reserved minced garlic

Instructions

  1. Prepare the steak by placing the cubed sirloin in a large bowl or zip-top bag.
  2. Peel and finely mince the garlic. Reserve one clove for later use.
  3. Mix the remaining minced garlic with vegetable oil, brown sugar, Worcestershire sauce, and parsley; pour over the steak and marinate for at least 6 hours or overnight.
  4. Preheat your grill to medium-high heat and skew the marinated beef onto metal skewers.
  5. Grill the skewers until they reach an internal temperature of 135-140°F for medium-rare, turning occasionally.
  6. Tent cooked skewers with foil to keep warm while preparing garlic butter by melting reserved garlic in butter, then brushing over the skewers before serving.
