- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup very cold unsalted butter (or dairy-free alternative)
- 1/2 cup very cold shortening
- 2 large eggs
- 1/2 teaspoon apple cider vinegar
- 6 tablespoons ice cold water
- 16 teaspoons gluten-free seedless strawberry jam
- 1 cup powdered sugar
- 1/4 teaspoon pure vanilla extract
- 2 tablespoons water
Instructions
- In a large bowl, mix the gluten-free flour blend, sugar, and salt. Cut in the cold butter and shortening until crumbly.
- In another bowl, whisk eggs, apple cider vinegar, and water; add to the flour mixture to form a dough. Divide into two discs, wrap in plastic wrap, and chill for 30 minutes.
- Preheat oven to 350°F (175°C). Roll out one disc on a floured surface into an 1/8 inch thick rectangle; cut into rectangles measuring approximately 3×4 inches.
- On half of each rectangle, place about 2 teaspoons of strawberry jam. Brush edges with water and fold over; seal with a fork.
- Bake for about 20 minutes or until golden brown.
