Ingredients
- 1 1/2 pounds boneless, skinless chicken breast (cut into 1-inch chunks)
- 4 tablespoons olive oil
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 4 garlic cloves (minced)
- Fresh parsley
- Fresh oregano
- 1 1/2 cup plain Greek yogurt
- 1/2 cup minced cucumber
- 1/4 cup fresh dill (finely minced)
- 1 cup finely diced cucumber
- 1/2 cup finely diced tomato
- 1/4 cup finely diced kalamata olives
- 1/4 cup finely diced green olives
- 1 teaspoon lemon juice
- 1 tablespoon honey (for relish)
- 1 tablespoon olive oil (for relish)
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine lemon juice, lemon zest, olive oil, honey, apple cider vinegar, oregano, salt, pepper, garlic, and parsley. Add chicken chunks and coat well. Cover and marinate for at least 30 minutes.
- For the yogurt dip, mix Greek yogurt with lemon juice, minced cucumber, dill, salt, and pepper in another bowl.
- Prepare the tomato-olive relish by combining diced cucumber, tomatoes, olives, lemon juice, honey, olive oil, and parsley with salt and pepper.
