  • 2 ½ pounds boneless, skinless chicken thighs
  • 1 tablespoon smoked paprika
  • 1 tablespoon packed dark brown sugar
  • 1 teaspoon salt
  • 1 teaspoon dry mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ¼ teaspoon freshly ground black pepper
  • ½ cup ketchup
  • ¼ cup pure maple syrup
  • 2 tablespoons molasses
  • 1 finely chopped chipotle chile pepper in adobo sauce
  • 2 teaspoons broth (as a substitute for Worcestershire sauce)
  • 2 teaspoons Dijon mustard
  • ½ teaspoon garlic powder
  • 1 lime (juiced)

Instructions

  1. Trim excess fat from chicken thighs and place on a foil-lined baking sheet.
  2. In a bowl, mix smoked paprika, brown sugar, salt, dry mustard, garlic powder, chili powder, cumin, and black pepper. Rub evenly on both sides of the chicken. Cover and chill for 30 minutes.
  3. In a saucepan over medium heat, combine ketchup, maple syrup, molasses, chopped chipotle pepper, broth, Dijon mustard, and garlic powder. Simmer for 15 minutes.
  4. Preheat grill to medium heat. Cook chicken for approximately 4 minutes on one side before flipping.
  5. Baste with BBQ sauce; cook for an additional minute per side until internal temperature reaches 165°F.
  6. Let rest for 5 minutes before serving.
