- 1/4 cup pineapple juice
- 1 tbsp fresh ginger (minced)
- 6 cloves fresh garlic (minced)
- 1/4 cup dark brown sugar
- 1/2 cup soy sauce
Instructions
- In a mixing bowl, combine pineapple juice, minced ginger, minced garlic, dark brown sugar, and soy sauce. Whisk until the sugar is dissolved.
- Divide the marinade in half; use one half to marinate the chicken and pineapple chunks in the refrigerator for 20-25 minutes.
- Heat the remaining marinade in a saucepan over medium heat until simmering. Optionally thickening with cornstarch.
- Thread marinated chicken and pineapple onto skewers.
- Grill skewers on medium-high heat for about 15 minutes, basting with the thickened teriyaki sauce until chicken reaches an internal temperature of 165°F.
