  • 1 cucumber
  • 1 pint tomatoes
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 5 oz feta cheese
  • 2 tbsp fresh dill
  • 2/3 cup olive oil
  • 1/2 cup red apple vinegar
  • 1 lemon
  • 1 tbsp oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions

  1. Prepare your vegetables: Slice cucumber, dice bell peppers, thinly slice red onion, and halve or quarter tomatoes.
  2. Cook the pasta: Boil salted water in a large pot and cook pasta according to package instructions until al dente (9-10 minutes). Drain and rinse under cold water.
  3. Make the dressing: Whisk together olive oil, red apple vinegar, lemon juice, oregano, garlic powder, salt, and pepper in a bowl or jar.
