  • 2 cups confectioners’ sugar
  • 24 tbsp whole milk (as needed)

Instructions

  1. Prepare the yeast by combining warm water and sugar in a bowl. Sprinkle yeast on top and let sit until frothy (5-10 minutes).
  2. In a separate bowl, mix both flours and salt; create a well in the center. Add yeast mixture and 4 tbsp olive oil, stirring to form a shaggy dough.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth, then place it in a greased bowl, covering with plastic wrap.
  4. Let it rise in a warm spot for about 60-90 minutes until doubled.
  5. Preheat oven to 375°F (190°C). Punch down the risen dough and spread onto a parchment-lined baking sheet into a rectangular shape about ½ inch thick.
  6. Create dimples across the dough's surface and fill each with raspberry preserves.
  7. Drizzle remaining olive oil over the top and bake for about 22 minutes until golden brown.
  8. While baking, whisk together confectioners’ sugar with enough milk to reach desired icing consistency.
  9. Allow cooling slightly before drizzling with icing, then slice and serve.
