  • 1/2 small banana
  • 1/3 cup sugar
  • 1/4 cup crushed pineapple, lightly drained

  • 1/8 teaspoon almond extract
  • 1/3 cup + 3 tablespoons flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • pinch of salt
  • 3 oz. cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons dark brown sugar
  • 35 tablespoons powdered sugar
  • toasted pecans for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with four cupcake liners.
  2. In a mixing bowl, combine canola oil, mashed banana, and sugar until well blended. Add crushed pineapple, coconut shreds, egg, and almond extract; mix thoroughly.
  3. Gently fold in flour, baking powder, cinnamon, and salt until just combined.
  4. Evenly distribute the batter into the lined cupcake cups and bake for 18-21 minutes, or until a toothpick comes out clean.
  5. Allow to cool completely before preparing the frosting by beating cream cheese, butter, and brown sugar until smooth. Gradually mix in powdered sugar for desired consistency.
  6. Frost cooled cupcakes generously with the prepared frosting and top with toasted pecans before serving.
