  • 8 bell peppers
  • 1 lb ground beef
  • 14 oz chickpeas
  • 14.5 oz diced tomatoes
  • 1 cup cooked brown rice
  • 1/3 cup parsley
  • 1 cup feta cheese
  • 2.5 tsp salt
  • 2.5 tsp garlic powder
  • 2.5 tsp cumin
  • 1.5 tsp coriander
  • 1.5 tsp oregano
  • 1/4 tsp cinnamon
  • 1/8 tsp cayenne pepper
  • 2 tbsp fresh mint, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds; place them upright in a baking dish.
  3. In a large bowl, mix together ground beef with salt, garlic powder, cumin, coriander, oregano, cinnamon, and cayenne.
  4. Add chickpeas, diced tomatoes, cooked brown rice, parsley, feta cheese, and mint to the beef mixture; combine well.
  5. Fill each bell pepper generously with the mixture and press down slightly.
  6. Cover with foil and bake for about 45 minutes; then remove foil and bake for an additional 10 minutes until golden brown.
