- 14 oz pasta (rotini or penne)
- 1 large cucumber
- 18 oz cherry tomatoes
- 3/4 cup olives (sliced kalamata)
- 5 oz feta cheese
- 1/2 red onion
- 1/4 cup fresh parsley (chopped)
- 1/3 cup olive oil
- 4 tbsp red apple vinegar
- 1 tbsp lemon juice
- 2 tsp dried oregano
- 1 tsp honey
- 3 garlic cloves (minced)
- Salt and pepper to taste
- Red pepper flakes
Instructions
- Cook pasta in salted water according to package instructions until al dente. Drain and cool.
- Prepare vegetables: slice cucumber, halve cherry tomatoes, and chop red onion and parsley.
- In a bowl, mix olive oil, vinegar, lemon juice, oregano, honey, garlic, salt, pepper, and red pepper flakes until well blended.
- In a large bowl, combine cooled pasta with cucumbers, tomatoes, olives, feta cheese, red onion, and parsley. Pour dressing over salad and toss gently.
- Chill for at least 30 minutes before serving for optimal flavor.
