Ingredients

  • 14 oz pasta (rotini or penne)
  • 1 large cucumber
  • 18 oz cherry tomatoes
  • 3/4 cup olives (sliced kalamata)
  • 5 oz feta cheese
  • 1/2 red onion
  • 1/4 cup fresh parsley (chopped)
  • 1/3 cup olive oil
  • 4 tbsp red apple vinegar
  • 1 tbsp lemon juice
  • 2 tsp dried oregano
  • 1 tsp honey
  • 3 garlic cloves (minced)
  • Salt and pepper to taste
  • Red pepper flakes

Instructions

  1. Cook pasta in salted water according to package instructions until al dente. Drain and cool.
  2. Prepare vegetables: slice cucumber, halve cherry tomatoes, and chop red onion and parsley.
  3. In a bowl, mix olive oil, vinegar, lemon juice, oregano, honey, garlic, salt, pepper, and red pepper flakes until well blended.
  4. In a large bowl, combine cooled pasta with cucumbers, tomatoes, olives, feta cheese, red onion, and parsley. Pour dressing over salad and toss gently.
  5. Chill for at least 30 minutes before serving for optimal flavor.
