Ingredients

  • 1 pint heavy whipping cream
  • 1/2 cup confectioners Swerve or preferred sweetener
  • 1 1/2 teaspoons vanilla extract
  • 7 oz keto chocolate chips (white, milk, or dark)
  • 1 1/2 tablespoons coconut oil
  • pinch of salt
  • chopped nuts, optional

Instructions

  1. In a bowl, whisk together heavy whipping cream, Swerve, vanilla extract, and a pinch of salt until smooth.
  2. Pour the mixture into popsicle molds and insert sticks. Freeze for at least 3 hours or overnight until solid.
  3. Melt keto chocolate chips with coconut oil in a microwave-safe bowl at 30-second intervals, stirring until smooth.
  4. Once frozen, remove bars from molds and dip each into the melted chocolate until fully coated.
  5. Place on parchment paper and add chopped nuts if desired. Let them sit until the chocolate hardens.
