  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ¼ tsp salt
  • ½ cup butter (cut into 8 pieces)
  • 1¼ cup granulated sugar
  • ¼ cup all-purpose flour
  • 4 large eggs
  • 2 tsp lime zest
  • ⅓ cup fresh lime juice
  • Drop of green (+ yellow) food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 11×7-inch baking dish with parchment paper.
  2. In a food processor, blend together the flour, powdered sugar, salt, and butter until crumbly. Press into the bottom of the prepared baking dish and bake for 18-20 minutes until golden brown.
  3. While the crust is baking, whisk together granulated sugar and flour in a bowl. Add eggs one at a time, mixing well after each addition. Stir in lime zest and juice until smooth.
  4. Pour the filling over the hot crust and bake for another 18-20 minutes until set.
  5. Cool completely in the pan for about an hour; refrigerate for at least 1-2 hours before serving.
