Description

Marbled Ube Cookies are a deliciously unique treat that beautifully marries the nutty flavor of ube with the classic sweetness of vanilla. Their vibrant marbled design makes them an eye-catching addition to any dessert table, perfect for celebrations or cozy afternoons at home.


Ingredients

  • 227 g (1 cup) unsalted butter (room temperature)
  • 250 g (1 1/4 cup) granulated sugar (and more for rolling)
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 270 g (2 1/4 cup) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp ube (purple yam) powder
  • 1 tbsp ube extract

Instructions

  1. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, cream together butter and sugar until smooth. Add egg and vanilla; mix well.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Gradually add dry ingredients to the butter mixture until just combined.
  5. Divide dough in half; add ube powder and extract to one half, mixing until fully incorporated.
  6. Roll heaping tablespoons of each dough into balls and coat in granulated sugar.
  7. Place on the prepared baking sheet, leaving space between each cookie. Bake for 11-14 minutes until edges are golden brown.
  8. Let cool on the baking sheet for 10 minutes before transferring to a wire rack.
