- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon fresh lemon juice
- 1 teaspoon Tabasco
- 1 3/4 cups water
- 2 cups all-purpose flour
- Salt
- 1/4 teaspoon baking soda
- 1 quart vegetable oil
- 2 pounds skinless cod fillets (cut into 4-inch pieces)
Instructions
- In a mixing bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon fresh lemon juice, and 1 teaspoon Tabasco until smooth. Set aside.
- In another bowl, combine 1 3/4 cups water with 2 cups all-purpose flour, salt, and 1/4 teaspoon baking soda. Mix until smooth and strain to remove lumps.
- Heat vegetable oil in a large saucepan to 360°F (182°C).
- Dust cod fillets with flour, dip in the batter, and fry in batches for about 7 minutes until golden brown.
- Drain on paper towels and serve immediately with the prepared Marie Rose Sauce.
