  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Tabasco
  • 1 3/4 cups water
  • 2 cups all-purpose flour
  • Salt
  • 1/4 teaspoon baking soda
  • 1 quart vegetable oil
  • 2 pounds skinless cod fillets (cut into 4-inch pieces)

Instructions

  1. In a mixing bowl, whisk together 1/2 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon fresh lemon juice, and 1 teaspoon Tabasco until smooth. Set aside.
  2. In another bowl, combine 1 3/4 cups water with 2 cups all-purpose flour, salt, and 1/4 teaspoon baking soda. Mix until smooth and strain to remove lumps.
  3. Heat vegetable oil in a large saucepan to 360°F (182°C).
  4. Dust cod fillets with flour, dip in the batter, and fry in batches for about 7 minutes until golden brown.
  5. Drain on paper towels and serve immediately with the prepared Marie Rose Sauce.
