  • ¼ cup granulated sugar
  • ¾ cup water
  • 8 fresh strawberries (hulled and dry)
  • 1 cup sweet red bean paste or vanilla cream
  • ½ cup potato starch (for dusting)

Instructions

  1. Wash and hull the strawberries, then dry them completely.
  2. Coat each strawberry in sweet red bean paste or whipped vanilla cream and chill briefly.
  3. In a mixing bowl, combine mochiko, sugar, salt, and water until smooth. Microwave for 2½–3½ minutes until glossy.
  4. Allow the dough to cool slightly on a well-dusted surface before slicing into equal pieces.
  5. Flatten each piece into circles, wrap around each coated strawberry, and seal well.
  6. Let rest for 10 minutes before serving.
