  • 1 large egg (room temperature)
  • 12 pineapple rings (drained)
  • 12 maraschino cherries
  • 6 tablespoons unsalted butter (room temperature)
  • 2/3 cup brown sugar (packed)
  • 2 tablespoons ground cinnamon
  • 1/2 cup unsalted butter (room temperature)
  • 4 tablespoons unsalted butter
  • Pinch fine sea salt
  • 1 cup powdered sugar
  • 23 tablespoons whole milk
  • 1/2 teaspoon vanilla

Instructions

  1. Prepare Tangzhong by whisking water and bread flour in a saucepan over medium heat until it thickens. Set aside.
  2. In a stand mixer, combine bread flour, sugar, yeast, and salt. Add heavy cream, whole milk, egg, vanilla bean paste, and Tangzhong; knead until smooth.
  3. Gradually add softened butter while kneading until elastic.
  4. Let the dough rise for about 30 minutes.
  5. Prepare the filling by mixing brown sugar, butter, and cinnamon.
  6. Create caramel by melting brown sugar and butter in a saucepan.
  7. Line a baking pan with parchment paper; layer the caramel mixture, pineapple rings, and cherries.
  8. Roll out the dough, spread filling over it, cut strips, roll them up, and place them in the pan.
  9. Allow to rise again for 1–2 hours before baking at 325°F for about 35–40 minutes.
