- 3 2/3 cups bread flour
- 1/3 cup granulated sugar
- 2 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1/3 cup heavy cream (room temperature)
- 1/3 cup whole milk (room temperature)
- 1 large egg (room temperature)
- 12 pineapple rings (drained)
- 12 maraschino cherries
- 6 tablespoons unsalted butter (room temperature)
- 2/3 cup brown sugar (packed)
- 2 tablespoons ground cinnamon
- 1/2 cup unsalted butter (room temperature)
- 4 tablespoons unsalted butter
- Pinch fine sea salt
- 1 cup powdered sugar
- 2–3 tablespoons whole milk
- 1/2 teaspoon vanilla
Instructions
- Prepare Tangzhong by whisking water and bread flour in a saucepan over medium heat until it thickens. Set aside.
- In a stand mixer, combine bread flour, sugar, yeast, and salt. Add heavy cream, whole milk, egg, vanilla bean paste, and Tangzhong; knead until smooth.
- Gradually add softened butter while kneading until elastic.
- Let the dough rise for about 30 minutes.
- Prepare the filling by mixing brown sugar, butter, and cinnamon.
- Create caramel by melting brown sugar and butter in a saucepan.
- Line a baking pan with parchment paper; layer the caramel mixture, pineapple rings, and cherries.
- Roll out the dough, spread filling over it, cut strips, roll them up, and place them in the pan.
- Allow to rise again for 1–2 hours before baking at 325°F for about 35–40 minutes.
