Ingredients
- 240 g All-purpose flour
- 100 g Powdered sugar
- 40 g Almonds (shredded)
- 1/8 tsp Salt
- 120 g Butter (cold and cubed)
- 1 Egg (large)
- 2 tsp Vanilla extract
- 300 g Raspberries (fresh or frozen)
- 180 g Mangos (cut into small cubes)
- 180 g Sugar
- 2 tbsp Lemon juice
- 3 Egg yolks
- 3 tbsp Cornstarch
- 1/8 tsp Salt
- 40 g Butter (cubed)
- Fresh Raspberries (for garnish)
- 1 Mango (fresh, for garnish)
Instructions
- Prepare the shortcrust by mixing flour, powdered sugar, almonds, salt, cold butter, egg, and vanilla until it forms a dough. Chill for 30 minutes.
- Roll out the dough to fit your tart pan and bake at 180°C (350°F) for 25 minutes.
- For the filling, combine raspberries, mango cubes, sugar, lemon juice, egg yolks, cornstarch, salt, and cubed butter in a saucepan until thickened.
- Pour the filling into the cooled crust and refrigerate for at least two hours before serving.
