  • 240 g All-purpose flour
  • 100 g Powdered sugar
  • 40 g Almonds (shredded)
  • 1/8 tsp Salt
  • 120 g Butter (cold and cubed)
  • 1 Egg (large)
  • 2 tsp Vanilla extract
  • 300 g Raspberries (fresh or frozen)
  • 180 g Mangos (cut into small cubes)
  • 180 g Sugar
  • 2 tbsp Lemon juice
  • 3 Egg yolks
  • 3 tbsp Cornstarch
  • 1/8 tsp Salt
  • 40 g Butter (cubed)
  • Fresh Raspberries (for garnish)
  • 1 Mango (fresh, for garnish)

Instructions

  1. Prepare the shortcrust by mixing flour, powdered sugar, almonds, salt, cold butter, egg, and vanilla until it forms a dough. Chill for 30 minutes.
  2. Roll out the dough to fit your tart pan and bake at 180°C (350°F) for 25 minutes.
  3. For the filling, combine raspberries, mango cubes, sugar, lemon juice, egg yolks, cornstarch, salt, and cubed butter in a saucepan until thickened.
  4. Pour the filling into the cooled crust and refrigerate for at least two hours before serving.
