  • 1/8 tsp salt
  • 3 eggs
  • 2 tbsp olive oil
  • 8 tbsp granulated sugar
  • 1 lemon (zested)
  • 7 oz Ricotta cheese
  • 1 tsp vanilla extract
  • 1/4 tsp lemon juice
  • 1 tbsp icing sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with parchment liners.
  2. In one mixing bowl, whisk together 1 1/3 cups all-purpose flour and 1/8 teaspoon salt. In another bowl, combine 1 egg, 2 tablespoons olive oil, and 3 tablespoons granulated sugar until blended.
  3. Gradually add the dry ingredients into the wet mixture; mix until just combined.
  4. For the filling: whisk together 2 eggs and 5 tablespoons granulated sugar in a separate bowl. Mix in lemon zest, 7 oz Ricotta cheese, and 1 teaspoon vanilla extract until creamy.
  5. Fill each muffin cup halfway with batter, add a dollop of filling on top, then cover with more batter until three-quarters full.
  6. Bake for about 50 minutes or until golden brown. Cool before serving.
