  • 1 teaspoon granulated sugar
  • 1 cup unsalted butter (cold and cut into cubes)
  • 45 tablespoons cold water
  • 1 cup strawberry preserves (homemade or store-bought)
  • 1 cup powdered sugar
  • 12 tablespoons heavy cream or milk
  • Rainbow sprinkles (optional)

Instructions

  1. Prepare the filling by mixing sliced strawberries, lemon juice, lemon zest, granulated sugar, and vanilla extract in a bowl. Let it sit for 10 minutes.
  2. In another bowl, combine flour, salt, and sugar. Add cold butter and mix until crumbly. Gradually add cold water until a dough forms. Chill for 30 minutes.
  3. Roll out the dough on a floured surface and cut into rectangles.
  4. Preheat the oven to 375°F (190°C). Assemble pop tarts by placing filling between dough rectangles and sealing edges.
  5. Bake for 25-30 minutes until golden brown. Cool before glazing with a mixture of powdered sugar and cream.
