- 1 can (14.5 oz) creamed corn (half drained)
- 1 cup muenster cheese (shredded)
- 5–6 tablespoons jalapenos (deseeded, chopped)
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine yellow cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together beaten eggs, buttermilk, and canola oil until smooth.
- Gently fold the wet mixture into the dry ingredients until just combined.
- Drain half of the liquid from the creamed corn and add it to the batter along with muenster cheese and chopped jalapenos; fold gently to mix.
- Pour the batter into a greased 9-inch square baking pan and smooth out the top.
- Bake for approximately 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
