  • 1 can (14.5 oz) creamed corn (half drained)
  • 1 cup muenster cheese (shredded)
  • 56 tablespoons jalapenos (deseeded, chopped)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine yellow cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together beaten eggs, buttermilk, and canola oil until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. Drain half of the liquid from the creamed corn and add it to the batter along with muenster cheese and chopped jalapenos; fold gently to mix.
  6. Pour the batter into a greased 9-inch square baking pan and smooth out the top.
  7. Bake for approximately 25 minutes or until golden brown and a toothpick inserted in the center comes out clean.
